BAKED APPLES WITH OATMEAL STREUSEL TOPPING – Sip & Snack Saturday

This is a super easy, healthy dessert, and great for guests. I like to double or triple the recipe to make several batches on different days/weeks, or freeze the topping in portions. It's best served warm, but makes a fine cold midnight snack. It can also be made a day ahead.
Makes a good M6 (you are allowed to indulge yourself once this week-end.)
For 1 Serving = ½ apple. This recipe will make about 6 to 8 portions. So If you are not planning to share, I advise you to freeze some of the topping and bake it again when you wish.

Ingredients & Directions: 1. Slice 3-4 apples in half with a large knife, then scoop out the seeds and stem parts with a melon baller. You can use any kind of apples. 2. Mix together: - A little over half stick/quarter cup melted butter (I would use coconut butter for this which you can find On NutriSLIM Corner) if you don’t have use a part of olive oil or coconut oil.) - 1/2 cup oats - 1/2 cup flour (I used whole wheat) or gluten-free 'flour' of your choice like quinoa or coconut flour or even almond meal. - 1/2 cup brown sugar - 1 tsp cinnamon - pinch of ground ginger - pinch of salt 3. Fill and top apple halves with the mixture. 4. Bake at 350F/180 C until tops are golden brown and apples swell, about 30 minutes. TIPS: You can add sunflowers, flax, pumpkin seeds if you wants and some crunched nuts like walnut or sliced almonds.
