GRANOLA CUPS WITH BANANA CREAM - Sip & Snack Saturday

First of all, I never thought by sharing my SLIMher Homemade Granola during my 1st Cooking Class, you would have become addicted to it!!!

The best comment I've got this week was that once you go for this recipe you would never go back to those Industrial, filled with fake sugar, and satured fat!!! That's my best compliment!

So Here You can find this famous SLIMher Healthy Homemade Granola at our NutriSLIM Healthy food Corner.

The only thing you will have to do is following the instructions on the pack and add the wet ingredients. I suggest for that specific recipe of making the Granola the shape of a cup to maybe to add slicely more of apple sauce so the cups don't break down even after cook.

BANANA CREAM RECIPE

  • 1 cup cashews, covered in water and soaked overnight

  • 2 ripe bananas

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon cinnamon

  • 1 tablespoon raw honey or agave nectar if vegan

  • 1/4 cup water

Instructions
  1. Preheat oven to 350F or 180C.

  2. Place all granola cup ingredients in a bowl and mix until combined. Spread coconut oil in each muffin tin and scoop a dollop of the granola mixture into each compartment. You should have enough mix to cover the bottom in a thin layer, as well as the sides. Wet your fingers to press down to form the cups, making them as thin as possible, but ensuring to cover all sides. Place in oven for 15-20 minutes, or until brown and crisp. Remove from oven and place the muffin tin on a wire rack and allow to cool before taking out the individual cups with a knife.

  3. Place all of the banana cream items (I personaly would mix the cashew first with a bit of water, then add the rest of the ingredients) in a Nutribullet or high speed blender and blend till smooth. Adjust the water accordingly. I prefer a thicker yogurt-like consistency.

  4. Once the cups are cool, remove from the tin, top with banana cream and additional fresh fruit. Keep the additional cups in an air tight container in the refrigerator.
