EASY VEGAN TIRAMISU - Sip & Snack Saturday

It’s the week-end of red, pink and love so I thought it would be appropriate to share a mini-sized Valentine’s Day healthy vegan dessert recipe for two. This tiramisu dessert will make you forget about the original Italian one and please anyone with a sweet tooth.

As my Valentine gift for you I will share another Yummy dessert gilt free to share with you beloved one in my next post tomorrow!

Make 6 small mason Jars.

Crust

  • 1 cup walnuts

  • 6 dates

  • ¼ tsp instant coffee (optional) or a few drops of natural coffee Flavor

  • 1 tsp vanilla extract

  • pinch of sea salt

Filling

  • 1 + ¾ cup cashews (not soaked)

  • 1 cup soy milk (for velvet texture you will nee to stick with Soy Milk)

  • ⅓ cup maple syrup (Can be replace for Raw Honey or Coconut Syrup (available at NutriSLIM Corner)

  • ⅓ cup melted coconut oil

  • 1 tsp vanilla extract

  • pinch of sea salt

  • cacao/cocoa powder for dusting

  • coffee beans for decorating

  1. To make the crust, soak the dates in hot water for 2-3 minutes (longer if not using Medjool dates). Add walnuts to the food processor and process until ground. Add the rest of the crust ingredients and process again.

  2. For the filling, combine all of the ingredients in a high speed blender and blend for 2 minutes until smooth.

  3. Divide the crust between 6 small mason jars and press with fingers to cover the bottom.

  4. Add the filling on top of the crust.

  5. Place the mason jars in the freezer for 10-15 minutes to set.

  6. Remove from the freezer and dust with cacao/cocoa powder and add coffee beans if desired.

  7. Refrigerate for 6 hours or overnight to set.
