MIX BERRIES LEMON CRISP - Sweet Snooze Sunday

Happy Valentine's Day everyone!!! You don't have to be in a relationship to celebrate Love with your friends, family members, and Kids...

Feeling fruity today, this easy recipe will satisfy any sweet craving without feeling guilty.

Make 2 Mason jars.

** Note: You can either follow the recipe below or use The Homemade Healthy Granola Mix as the topping.

Ingredients:

Topping

¼ cup Gluten free oats (if possible I have found it in New Villa Market next to IndexLiving)

1 tbsp. Unsweetened shredded coconut (My lovely member, has found it freshly shredded in Chat Chai Market, and kindly offer me a bag. The Best!, it will just give me another reason to find a way to park over there)

2 tbsp. Almond flour (ground almonds, or Almonds meal)

1 tbsp. Coconut oil (solid put it in the fridge for 1 hour)

½ tbsp. Coconut sugar (available at NutriSLIM Healthy Food Corner)

Pinch of salt

Filling

1 cup Frozen Mixberries (in Makro, previsouly defrost)

1 tsp. Lemon juice

1 tsp. Lemon zest

½ tsp. Arrow root (you can substitute for Tapioca flour, or worst case Cornstarch)

1 tbsp. Maple syrup (or honey or Coconut Syrup that you can find at NutriSLIM Healthy Food Corner)

Directions:

  1. Preheat oven to 350F or 180C.

  2. In a small mixing bowl, combine oats, coconut, coconut sugar, salt, almond flour and crumble together with the coconut oil until everything sticks together.

  3. In another small mixing bowl, stir together mixberries, lemon juice, zest, maple syrup and arrow root powder and set aside (or substitutes mentioned above).

  4. Scoop the Mixberries filling into two, ramequins or mason jars and top it with the oat crumble you made previously.

  5. Bake in the oven for roughly 30-35 min until the filling starts to bubble and the top is golden.

  6. Allow to cool slightly and enjoy with a dollop of coconut ice cream.

**Note: Substitutions For Thickening: Per 2 teaspoons arrowroot powder needed substitute: 1 tablespoon quick cooking tapioca OR 1 1/2 teaspoons of cornstarch OR 1 teaspoon mashed potato flakes
