TEMPEH & BROCCOLI PATTIES WITH ZUCCHINI NOODLES - Tasty Thursday

Today I'm sharing with you this lovely dish that I tried out last month with whatever I had left in the fridge.... Basically it's more or less the same bas as my veggies burgers that I shared with you back in June. (link below)

It makes 8 to 10 patties depending of the size you decide to make them.
Have 3 to 4 patties per Meal that I served on the top of Zucchini noodles with a bit of Pesto, but you could to it with a Marinara sauce, Up to you!

Ingredients
185grs of Tempeh (minced)
1 small minced broccoli, fresh only
1/2 cup red onion, minced
1 XL egg, beaten
1/2 cup of Oats
1 Tbsp of Steak seasoning
1 Tbsp of low sodium soy sauce
2 Tbsp minced garlic
3/4 cup fresh grated Parmesan
Olive oil
Salt & Pepper
Instructions
In a large bowl add the tempeh previously minced in a grinder or food Processor.
Next, add broccoli, garlic, onion, Soy sauce and steak seasoning.
Mix just until coated.
Add in the egg, cheese and Oats and mix gently with a large spoon until the mixture is combined.
Preheat a skillet with a little of olive oil.
Scoop the mixture with 2 tablespoons and gently shape into a pattie. The mixture should hold a pattie shape. If it doesn’t add just a Tbsp more of oats.
Place the patties in the skillet previously oiled to and cook it for a few minutes on each side to make them all golden brown and a crust has formed on each side.
Serve it on the top of GF Pasta or Zucchini Noodles with a sauce of your choice... It will be nice inserted into a wrap or sprinkled on top of a salad for a Lunch on the go.
*** Note: If you are not a fan of Tempeh, replace it buy a can or chickpeas, kidney beans or green peas, remove the water and rince them off properly.
