GRILLED ZUCCHINI ROLL-UPS - Sip & Snack Saturday

It's been a while since I had shared with you a recipe prefect for Appetizer...

Here it is below, stop buy crips and other chips. These little zucchini rolls you will impress your guest without any gilt on putting on weights.

Good to serve for appetizer or as a snack M4 from your SLIMher Nutrition Plan

Ingredients

- 2 medium zucchini

- olive oil, salt and pepper

- hummus (From NutriSLIM Kitchen's Corner)

-cooked chicken

- red pepper, minced

- onion, minced

- crumbled feta cheese

Instructions

  1. Cut the ends off the zucchini, then thinly slice lengthwise.

  2. Brush with olive oil, sprinkle with salt and pepper.

  3. Grill for 2-4 minutes per side depending on thickness.

  4. Let cool or refrigerate until ready to use.

  5. Spread one side of each zucchini strip with hummus.

  6. Top with chopped chicken, veggies and cheese and roll.

  7. Place seam side down on a plate.
