CARROT GINGER & CHIA SEEDS MUFFINS - Sip & Snack Saturday

These little muffins are by far my most favorite muffin to bake, filled with carrots, raisins, and ginger. Perfect to grab on the go for breakfast after you daily exercises. I am Introducing my gluten and grain free Carrot Ginger Muffins.

Make about 12 regular muffins.

1 serving per day.

Ingredients

  • 2 cups blanched almond flour

  • ½ teaspoon himalayan sea salt

  • 1 teaspoon baking soda

  • ½ tsp allspice

  • ½ tsp powdered ginger

  • 1/4 cup of chia seeds (soaked into a few spoons of warm water to obtain a jelly texture)

  • ½ cup shredded coconut shreds (unsweetened)

  • 2 eggs

  • ½ cup coconut oil, melted

  • ½ cup maple syrup OR honey OR agave

  • 1-2 Tbs grated fresh ginger

  • 1 cup grated carrot

  • ¾ cup raisins, soaked in water for 15 minutes and drained

Directions

  1. In a large bowl, combine almond flour, salt, baking soda, spices, and coconut shreds

  2. In a smaller bowl whisk together eggs, chia, oil, and syrup. Add fresh ginger, grated carrot, and raisins.

  3. Stir wet ingredients into dry

  4. Spoon batter into paper- lined muffin tins

  5. Bake at 350°F for 20-22 minutes for regular muffins.

  6. Cool and serve

Notes

Cinnamon can be used instead if you do not have allspice.

You can even replace and use Protein Powder instead, For tohse who want to build up muscle after your work-out session.
