VEGETARIAN DRAGON BOWLS - Tasty Thursday

Dragon bowl. Buddha bowl. Whatever you might call it. It's Simply just another way to call a Salad Bowl. And what's inside is definitely not boring at all. Follow this beautiful recipe below:

Make 4 to 6 servings

Ingredients

  • DRAGON BOWLS

  • 4-6 cups mixed vegetables (cauliflower, sweet potato, broccoli, mushrooms)

  • 1.5- 2 tbsp olive oil

  • ½ tsp Himalayan salt

  • 4 cups cooked Bulghar (or substitute with quinoa, brown rice) per serving have 3/4 cup per person.

  • 1 cup shredded carrots

  • 1 cup cucumber thinly sliced

  • 1 red bell pepper thinly sliced (can be replaced by Cherry tomatoes)

  • 5 cups raw spinach

  • SAUCE

  • ½ cup canned coconut milk

  • ½ cup natural peanut butter

  • 1 thumb sized piece of ginger

  • 1 tbsp maple syrup

  • 1.5 tsp of sesame oil

  • 1.5 tsp soy sauce

  • 1.5 tsp sriracha or hot chilly sauce

Directions:

  1. Pre-heat oven to 425F or 220C

  2. Chop up your vegetables (mushroom, sweet potatoes, cauliflower) for roasting. Toss them in the olive oil and salt and spread out on a cooking tray.

  3. Bake for 40 minutes in total, but make sure to toss them over with a spatula around the 20 minute mark.

  4. While they are baking, make the sauce. Put all the sauce ingredients in to a blender and mix on high until smooth.

  5. Keep Broccoli, cucumber, carrots, red bell peppers and Spinach raw.

  6. Portion out ¾ of Bulghar, 1 cup of roast vegetables and add top as per your taste with carrots, broccoli, cucumber, red bell peppers and spinach into a bowl.

  7. Drizzle with sauce.

Add a little of Sesame seeds for the crunch.
