I LOOOOVE Falafel!! But depending of what's inside and the way you decide to cook it. This Healthy dish might become one to avoid.
Here is my healthy version of it!!
It is perfect to aadd into a salad bowl or into a wrap filled up with other veggies. I haven't try it yet, but I'm looking forward to make it.
M3 & M5 of SLIMher Nutrition Plan.
Make about 10 to 12 balls depending of the size you give them.
Have maximum 3balls per serving.
Ingredients:
2 cups Broccoli or Zucchini (grated)
2 cups chickpeas (garbanzo - soaked and cooked or canned)
2 garlic cloves
2 cups cilantro (coriander leaves)
1/2 cup of fresh mint
1 tsp chilly powder
1 tsp cumin powder
1 tsp spirulina powder Or Chlorella powder (available at the Healthy Green Corner - NutriSLIM @SLIMher)
1 tsp turmeric powder
2 tbsp of Chia Seeds (available at the Healthy Green Corner - NutriSLIM @SLIMher)
1/2 tsp salt, pepper (to taste)
Directions:
Grate the broccoli (from food processor) or zucchini (if you choose Zucchini, add 1/2 tsp salt and allow to rest for 30 minutes. Next squeeze the zucchini to remove as much moisture as possible). If using dry chickpeas, soak overnight and cook or use canned chickpeas but rinse them well under clear water first.
Chop cilantro leaves and garlic. Grind the cooked chickpeas using very little water.
Make the chia seeds blow into small amount of water after a few minutes you should get soon a jelly texture.
To the grated broccoli or the squeezed zucchini add the chickpea puree, coriander leaves + garlic mixture, chilly powder, spirulina powder, cumin powder and salt. Mix well.
Make small balls of the mix or you can also flatten the balls, place on parshment paper on baking tray and bake in a preheated 400F or 210C oven for 20 min, flip over and then bake for another 10 - 15 minutes.
You can add a Tahini Sauce to go with it:
1 1/4 cups plain yogurt
1/4 cup or tahini (sesame paste)
1 lime juice freshly squeezed
