THAI COCONUT CURRY HUMMUS - Sip & Snack Saturday

After the Falafel from last Tasty Thursday, let's stay in the Mediterranean spirit with with delicious Hummus with a mix of Thai Flavors.
Perfect for your BBQ nights, Top on your salad bowls, or with carrot, cucumber sticks.
1/3 cup per serving.
Ingredients:
  • 2 cans chickpeas, drained

  • ¾ cup unsweetened full-fat coconut milk

  • 1/3 cup red curry paste

  • 3 garlic cloves

  • Zest of 1 lime + the juice of 1 lime squeezed

  • 1 teaspoon salt

  • Garnish with fresh thai basil leaves

Directions:
  1. Place the chickpeas, red curry paste, garlic, lime zest, and salt in the food processor. Pour ½ cup of coconut milk over the top and cover.

  2. Puree until very smooth, then check the consistency. If you like your hummus a little more loose, add another ¼ coconut milk and puree again.

  3. Scoop into a bowl and sprinkle chopped thai basil over the top.
