GREEN PESTO & CREAMY SPIRULINA LINGUINE - Tasty Thursday

My Healthy version of a pasta dish with the goodness of Spirulina Linguine directly coming from NutriSLIM Healthy Corner (250thb for the box) and I topped it with a crunchy pesto and creamy cauliflower sauce. Dairy free and super delicious!

You can combine with Shrimps or Chicken, but I prefer shrimp since Spirulina is coming from a seaweed.

Make 2 servings. A box of Spirulina linguine will allow 4 servings.
Ingredients:
1- Dairy free pesto
1/2 cup cashew nut previously soaked
1/2 cup basil leaves
1 cups baby spinach leaves
2 cloves garlic
1 lime, juiced
4 tbsp olive oil
pinch salt and pepper
2- Creamy Cauliflower Sauce
1 small size cauliflower
2 cloves garlic
1 tbsp of Olive oil
1/2 to 1 cup of veggies broth (depends on how thick or fine you want your sauce to be)
Directions:
1- Pesto
Place Cashews, basil leaves and salt/pepper in to processor and blitz until finely chopped. Add a little oil and lime juice at a time and blitz until well combined. You can make the pesto as smooth or crunchy as you like, just blitz further for a smoother texture.
2- Cauliflower Sauce
Chop garlic finely and saute in a little olive oil in a large fry pan over low heat until translucent. Remove and set aside. Chop cauliflower and in a saucepan with the 500ml boiling water cook for 7-10 minutes until tender. Using a slotted spoon place cauliflower into a blender along with 1/2 - 1 cup of the liquid, the garlic, salt and pepper. Blend until the sauce is very smooth, adding more water if needed. You may need to do this in batches if your blender is not large enough. And if your blender is not in glass make sure that it has cool down before to blend everything.
Cook the pasta for 6-8 minutes in boiling water and served drizzled with pesto and cauliflower sauce.
