PROSCUITTO WRAPPED AROUND AVOCADO – Sip & Snack Saturday

Make approximately 8-10 slices.
Make a good Fingers food for Healthy Aperitif or just like a topping on a fish or piece of Chicken on a M5.
Adapted by Aura. The recipe I found was with Bacon, But I’ve tried to select a less fat cold cut like prosciutto, parma ham or dry beef, see what you can find in Tesco or Makro.
Ingredients:
Slices of prosciutto, parma ham or dry beef.
1 large avocado peeled, pitted and halved, sliced into thin slices pieces (I sliced each half avocado into 5 slices)
1 tbs lemon or lime juice
1 teaspoon chili powder and fresh herbs
Ricotta cheese, feta or low fat Philadelphia
Directions:
Preheat oven to 220C.
Cut each avocado half into 4-5 slices. Place in medium bowl and gently toss in lemon or lime juice.
Fill the center of each avocado slice with 1/4 to 1/2 teaspoon of the cheese of your choice mixed previously with salt, pepper and a bit of herbs and chili spices.
Take one strip the cold cut of your choice, carefully wrap around the avocado slice, starting at one end and working to other end, and securely tuck in end piece.
Repeat with remaining and place onto baking sheet.
Bake for 5-10 minutes or until cold cuts becomes crisp.
