CLEANSING CUCUMBER SOUP – Tasty Thursday

Continuing this week and trying to turn you into a GREENher, SLIMher you, this refreshing, delicate cucumber soup is a perfect pairing to a gorgeous and sunny day.
It’s also a great cleanser for anyone looking for that Clean, Green & Slim feeling, not too deprived, but just right.
Make 4 Servings

Ingredients:
2 large cucumbers, rough chopped 1 ripe avocado, pitted, cubed 1/3 of a red onion, chopped 1 tablespoon fresh cilantro, chopped Juice of 1/2 lime 1 teaspoon sea salt 1 1/2 cups cold water 4 fresh cilantro leaves, to garnish
Directions:
1. In a large food processor, combine cucumber, avocado, red onion, dill, lime juice, and sea salt and process for 30 seconds to combine. 2. Stream in 1 to 2 cups cold water (depends how thick or smooth you want it) and blend until smooth. 3. Chill for 30 minutes, or serve immediately, topping with some cilantro leaves to garnish.
*Note: If you are like me and not fan of cold soup, and prefer it warm/hot, replace the cucumber by Zucchini, bring it to a boil into 1 cup of water. Add the avocado once it’s cooked and blend everything together. You might have to add another cup of Water depending on how you want thick or smooth you want it.
