GREEN GREEN POLENTA - Tasty Thurday

For the Next few weeks I am going to share recipes ideas for lunch. Yes, Lunch is actually a super important meal, so don't neglecte it. And don't let breakfast tell you otherwise.

When you eat the right kind of food at lunch, it’ll help you stay full and alert throughout the afternoon. You won’t be as tempted to snack, and you’ll feel more energized. But healthy lunch can sometimes be a little hard to plan for and figure out. So after few researches on some healthy people's (from nutrition experts to personal trainers) routine to see what they like to eat for lunch. Today it will be a Green Green Polenta (the original recipe was with Grits, but I don't know if we can find this here)

INGREDIENTS:

1 bunch spinach and kale combine

1 large green onion

4 cups water

1 cup milk (non-dairy milk of your choice, in my case Oats Milk)

1 cup uncooked polenta (or grits)

1 teaspoon salt

2 tablespoons of coconut oil or olive oil

Freshly ground black pepper

DIRECTIONS:

Cut out the tough stems and ribs of the greens and roughly chop. Trim the green onion and roughly chop. Place the greens and green onions in the bowl of a food processor or powerful blender. Process until the mixture forms a uniform paste, adding a little water and scraping down the sides if needed.

Combine the water, milk, polenta and salt in a medium saucepan and bring to a boil over medium-high heat. Stir, cover pan and reduce heat to low. Simmer, stirring frequently, for 15 minutes. (Polenta will start bubbling and splashing up as they thicken, so keep the lid on when you aren't stirring.) Stir in the greens mixture and simmer for 5-10 minutes more, stirring frequently, until the Polenta is fully cooked and have a consistency about as thick as sour cream.

Add more water and continue cooking, if needed.

Remove polenta from heat, stir in coconut oil and black pepper, and taste for seasoning. Serve immediately. Tastes great with poached eggs, or braised or roasted meats.
