MINCED CHICKEN LETTUCE TACOS STYLE- Tasty Thursday

Another Tasty Thursday to satisfy our Craving for Tacos but whitout the Tacos Shells when you are staying at home..... One Word YUMMYY!!

Make 2 Servings (4 Lettuce leaves stuffed with Chicken per plate)

I found this idea from looking up on Youtube and I kinda adapted according to our taste and whatever I could find in the Fridge so here's what I've made:

It is perfect as a M3 if you are on the go that you can actually use a wrap (from Villa Market). It makes a nice M5 too. That night I served it with Tomato Mozzarella... Which was actually hot.... I used the hot Skillet to Warm up on both side the sliced tomatoes and add on at the last minutes the sliced Mozza.. Soo good!! The tomatoes took the taste of the left other sauce from the pan. and the Mozzarella was melting due to the heat. Hubby is now preferring his Tomato/Mozza... heated :-P

Ingredients: 400 ground chicken 1/2 carrot shredded 2 small size Chinese cabbage 1/4 cup chopped fresh coriander leaves 2 tbsp. low sodium soy sauce 2 freshly squeezed limes juice 1 large garlic cloves, minced 1/2 shallots, finely chopped 1 tsp. of Chili powder (or chicken seasonning) 1 tbsp. Asian Sweet-chili sauce 1 tsp. of unsweetened peanut butter (optional if you are not a fan) Lettuce leaves (around 8 large leaves) Salt & Pepper

Optional garnishes: Additional Chopped coriander Sesame black and white Seeds

Instructions Combine the chicken, coriander, soy sauce, lime juice, garlic, chili, and Sweet-chili sauce in a bowl and stir to blend well. Heat 1tbsp. of Olive oil in a skillet until hot but not smoking. Add the chicken mixture and cook, stirring occasionally, until the chicken is just cooked through, about 5 minutes. Place the chicken mixture on each lettuce leaves. Sprinkle some sesame seeds on the top with some chopped coriander and serve while hot.
