Chewy Cinnamon Cranberry No-Bake Granola Bars

Makes around 10 bars

Ingredients:

  • 2 C old fashioned rolled oats(certified gluten free for gluten free bars)

  • 1/2 C raw pumpkin seeds

  • ½ C almond sliced

  • 3/4 C dried cranberries (can be replaced by dried mango, pineapple up to you)

  • 1/4 C coconut oil

  • 1/4 C brown sugar

  • 1/4 C honey

  • pinch sea salt

  • 1 tsp vanilla

  • 1 tsp cinnamon

Optional: for the Chocolate lovers you can add a few dark chocolate chips No more than ½ C.

Put parchment paper on your oven pan tray and set aside.

In a bowl, stir together the oats, pumpkin seeds, almonds sliced and cranberries and set aside.

In a small pot combine the coconut oil, brown sugar, honey and pinch of salt. Heat the mixture up and stir well to completely dissolve the brown sugar. Bring to a boil. Cook over medium heat for 2 minutes. Remove from the heat and stir in the vanilla and cinnamon. Pour the wet ingredients over the dry ingredients and stir well to combine. Once completely combined, pour the mixture into the parchment paper pan and press down very well with a spatula (lightly oiled if the mixture is sticking).

Cool completely before cutting into 10 bars (if they seem to pull apart while cutting into bars, place in the fridge for 20 minutes before slicing).

Wrap individually in paper or plastic wrap and store at room temperature.

Dry Ingredients -2.5 cups Gluten free rolled oats -1 cup raw pumpkin seeds -1 cup raw walnuts -1/2 cup sunflower seeds -1/2 cup Unsweetened shredded coconut -1/2 cup Dried cranberries -2 tbsp. ground flax seeds -1 tsp. cinnamon -1/2 tsp. sea salt Wet Ingredients -1/2 cup maple syrup -1/4 cup unsweetened apple sauce -1/4 cup natural peanut butter -1 tbsp. coconut oil -1 tsp.vanilla extract **Bake granola in oven at 150C for 40-45 min (toss half way through)
