ZUCCHINI PIZZA BITES - Tasty Thursday

It's the perfect thing to serve to nibble around a BBQ or apperitif evening with friends.
INGREDIENTS:
2 large zucchini, cut into 1/4-inch thick rounds
1tbsp. of Olive oil.
Sea salt and freshly cracked pepper
1/4 cup marinara sauce (will share this recipe soon, in the mid time you can use one from the can)
1/2 cup shredded mozzarella
1/4 cup mini ham pieces, optional
Italian seasoning, for sprinkling
DIRECTIONS:
Brush both Side of the zucchini slices with a bit of olive oil. Sprinkle with salt and pepper. Broil or grill the zucchini rounds (I used a grill pan set to medium-high) for 2 minutes on each side.
Place cooked zucchini rounds on a large lined baking sheet. Top with small amounts of sauce, cheese and ham pieces, if desired. Broil for an additional 1-3 minutes, or until cheese is melted, careful not to burn. Sprinkle with Italian seasoning and serve warm.

TIPS
To make larger rounds, slice zucchini diagonally.
You can use other veggies like Eggplant or Buttersquash
A grill pan isn’t necessary; feel free to use a large nonstick skillet to cook the zucchini rounds.
