MEATBALLS with CAULIFLOWER COUSCOUS and BASIL TOMATO SAUCE - Tasty Thursday

Chicken Meatballs with Cauliflower Couscous topped with Basil Tomato Sauce
Making for 2-3 serving.
Perfect M5/M3
Chicken Meatballs:
- 400grs of minced chicken
- 1 minced garlic clove
- 3 tbsps of oats
- 2 tbsps of chia seeds
- 1/4 cup of squeeze lime
- 1/4 cup of low sodium soy sauce
- 1 egg
- 1tbsp of olive oil.
- salt, pepper, oregano, mint
Place minced chicken, egg, lime, soy sauce, olive oil, oats, chia seeds, garlic, oregano, salt & pepper in a medium bowl.
Mix everything together with hand till evenly combined.
Form mixture into 3cm balls. (Help yourself with 2 spoons)
On a large baking sheet, put aluminum paper with a bit of olive oil over, to avoid the meatballs to be stuck.
Place meatballs and bake in upper third of oven until meatballs are just cooked through for 30 minutes. Half time flip them on the over side.
Cauliflower Couscous:
- 1 head cauliflower
- salt, pepper and herbs of your choice.
Cut the cauliflower into large pieces
Transfer the cauliflower to a food processor, process in two batches.
Pulse the cauliflower until completely broken down
Cook the cauliflower couscous to make it more tender and rice-like. Put the couscous into a bowl and stir with a little salt, pepper and herbs. Cover it with wrap paper and put it in microwave for 5 minutes, until the couscous is as tender as you like.
Basil Tomato Sauce
-1 crushed tomatoes can
-1/2 minced onion
-1 garlic clove minced
-1 cup of fresh basil leaves
-1 red chilli
- salt, pepper, oregano
-1 tablespoon extra-virgin olive oil
Coat a saucepan with 1 tablespoon of the olive oil and warm over medium-low heat. Add the 1/2 onion and garlic and cook, stirring, until soft. Add the crushed tomatoes; season with salt and pepper. Turn the heat up slightly to medium and simmer the sauce for 10 minutes, stirring occasionally. Add the basil leaves. Then if you want smoother, blend it for few seconds.
