COCONUT YOGURT CHIA SEEDS PUDDING - Sip & Snack Saturday

Make 2-4 servings
Ingredients
•1 cup greek yogurt or homemade yogurt with 1 Tbsp of shredded coconut.
•¼ cup raw honey
•1 teaspoon vanilla extract
•1 teaspoon ground ginger, freshly ground if possible.
•pinch of salt
•½ cup water
•4 Tablespoons chia seeds, (6 Tablespoons for really thick pudding)
•1 cup chopped pineapple, mangoes, or oranges, or bananas...
•a dash of almond slices.
Instructions
•Mix together the yogurt, maple syrup, vanilla, ginger until fully combined.
•Place 2 to 3 Tablespoons of chia seeds in each of the 2 jars combined with water, leave it for about 20mins until the chia seeds makes a jelly texture.
•Pour the coconut mixture evenly into each jar. Stir to fully mix in the chia seeds and secure the lids on the jars.
•Refrigerate overnight before serving.
•Serve with your choice of fruit chopped on the top of each jar, topped with almond slices, shredded coconut, cinnamon according to your taste.
Notes: This recipe is for 2 big servings, but it's really easy to multiply to serve more people. Just use a smaller jars.
