DAIRY-FREE COFFEE CREAMER – Sip & Snack Saturday

I have been trying for ever to cut on my morning coffee (which to be honest is not the healthiest one… Because it is an already made Mocha flavor packet…. I know!!! Bad!! Bad! Bad!) Especially when you think of all the ingredients list in it and additional flavoured creamers… yak! But I think that with this new recipe will totally make me go away from those packets…. Well It will ask me sometimes to prepare the coffee in the morning but I guess I can give it a try. Coconut milk, water, dates, and vanilla. That’s it. Only 4 ingredients in this ridiculously simple, healthy, and delicious dairy-free coffee creamer. Coconut milk for creaminess, dates for sweetness, and a splash of vanilla for a little extra flavour. All you have to do is toss all the ingredients in a blender or food processor, and voila! 5 minutes and you’ve got yourself a week’s plus supply of healthy coffee creamer (Save it in a glass bottle with a cap in the refrigerator).
Adapted by Aura First Sip in the morning. Will make around 2-4 serving combined with Black coffee. Depending how creamy and sweet you like your coffee.
Ingredients -½ cup of dates, pitted -½ cup hot water -1½ cups light coconut milk* -½ Tbsp. vanilla extract
Instructions Add dates and hot water to a high-speed blender or food processor. If your dates are a little dry, allow them to soak for 10 - 15 minutes so that they'll be easier to blend. Otherwise, process until dates have broken down and turned into a smooth paste, scraping down the sides of your blender as necessary. Add coconut milk and vanilla extract, and continue processing until everything is well combined and mixture becomes smooth. Transfer to a glass bottle container. You can run the creamer through a fine mesh strainer to ensure no bigger pieces of dates remain, but it shouldn't be necessary with a high-speed blender. Store in fridge for up to a week. Creamer will thicken as it sits.
Notes * Depending on how creamy you want your creamer, you can replace up to half of cup of coconut milk with a non-dairy milk of your choice like oats, almond Milk.
